Had an extra 3o minutes to spare today. So, I decided to try a new recipe, Mediterranean Parsley.
Key Ingredients: parsley, pine nuts, lemon juice, red bell pepper
I only had half the amount of parsley I need for the recipe. So, I used cilantro to make up the other half. I'm glad it worked out! It was delicious, not to mention quick and easy. The perfect compliment to a tamari marinated portobello stuffed with sundried tomato sunflower pate!
