When I like something, I tend to stick with it. Which is why I decided to have the stuffed mushrooms for dinner again.
I whipped up a batch of sun dried sunflower pate earlier in the evening and let it sit out while we played with the kids. Sitting it out, instead of putting it in the fridge will help make my dinner room temperature, as opposed to cold. After the kids were fed and put to bed, I let my portobello mushroom caps marinate in tamari, while I made a fresh container of almond milk.
By the time I was done with the almond milk, the mushrooms were ready. I stuffed them with the pate and enjoyed them with I nice tall glass of water. . . actually two nice tall glass of water, since I put way too much cayenne pepper in the pate this time!
Feeling pleasantly full and content . . . going to hang out with the hubby and enjoy the rest of the night!
