Wow, the busy days just keep coming!
Had a late lunch today. So, I decided to make something light and not ruin my appetite for dinner.
I guess I had Mediterranean plate of sorts. It included homemade tabouli, a cucumber/onion/red pepper salad with lemon-tahini dressing and a couple scoops of zucchini hummus.
Took about 15 minutes to make (made dressing on Sunday) and tasted better than I would find at any restaurant.
Now, I just need to decide what to make for dinner!
